Yep, I'm going to be burning the midnight oil tonight! And for the week ahead putting the finishing touches to several beautiful storybooks already in the pipeline. I'm cooking for one tonight too; Laura and the kids are away with pals to spend a carefree, fun-filled night in Wigwams. Ah, the open air. So I thought I'd at least prepare myself for the long hours ahead by getting creative in the kitchen! And here it is! This will keep me going til 2AM surely.
Pan fried Scottish salmon fillets in a sweet chilli marinade with plum tomatoes, served on a bed of lightly seasoned tender stem broccoli. Squidge of lemon. That'll serve them right for leaving me on my own when I'm snowed under!
